Chef bio: Jodee attended the Culinary Institute of America in New York and worked several chef jobs on the West Coast while trying to hone his skills. Then he came to Tybee and began working with his mother at her restaurant.

Favorite dish: Breakfast Club Chorizo

BREAKFAST CLUB CHORIZO
12 pounds fresh pork butt (Boston butt) cut into 1 inch cubes and chilled until very cold
½ teaspoon onion powder
3 tablespoons ground cumin
¾ ounces Spanish paprika (or smoked paprika)
2 ½ tablespoons cayenne pepper
3 ½ tablespoons salt
2 teaspoons garlic powder
2 teaspoons crushed red pepper
1 ounce vinegar
1 cup finely chopped onion
½ cup finely chopped garlic
3 ounces chipotle peppers in Adobo Sauce
3 ounces non-fat dried milk (or unflavored non-dairy creamer)
 
1. Place meat grinding attachments in refrigerator to chill.
2. Liquefy chipotle peppers with vinegar in food processor.
3. Combine all ingredients, including chipotle mixture, with diced pork, mixing very thoroughly. Chill for at least 2 hours (it must be kept cold through entire process.)
4. Using ¼-inch dye, run seasoned meat through grinder. Mix vigorously and quickly when complete. Chill immediately, or place in freezer bags, pressed flat, so it will freeze faster and thaw quicker.
Note: This is excellent for tapas recipes, scrambled eggs with browned chorizo, scallions and jalapenos, any omelets or your favorite wrap! We brown it and add it to our chili. Try browning it, remove from pan with slotted spoon — leaving the delicious ‘scarlet drippins’ to sauté your onions. Using bags of different sizes when freezing is a great idea — smaller ones for breakfast dishes, larger bags for chili or taco night.
